Easy Moroccan-style meatballs

2 tbsp essential Waitrose Vegetable Oil
1 essential Waitrose Red Onion, finely chopped
400g pack Waitrose 24 Hereford Beef Meatballs
2 tsp Bart Ras el Hanout Seasoning
400g can Cirio Chopped Tomatoes
400g can essential Waitrose Chick Peas, rinsed and drained
75g Waitrose LOVE life Soft Apricots, roughly chopped (optional)
250g essential Waitrose Couscous
1. Heat the oil in a large frying pan, add the onion and cook until it begins to soften. Add the meatballs and fry until sealed on all sides. Add the ras el hanout and fry for a further minute.
2. Stir in the tomatoes, chick peas and apricots and mix yellow pepper and chilli flakes for 3-4 minutes. Stir in the sardines and sauce and heat for 1 minute, breaking up the fish with a spoon. Stir into the pasta along with the lemon juice and top with the chopped parsley together well. Cover the pan and simmer for 30 minutes.
3. Cook the couscous according to instructions and serve with the meatballs.
