    Easy Baked Plaice with Goat's Cheese and Roasted Vegetables

    Serve this fabulously simple fish dish as a mid-week meal for the family or for supper when entertaining friends.

    • 4 x 175g plaice fillets, halved lengthways, from the fish service counter or freezer cabinet
    • 350g tub fresh Waitrose Mediterranean Vegetable Pasta Sauce
    • 100g pack Pant-Ysgawn Farm Organic Goat's Cheese
    • 2 yellow or orange peppers, cut into thick strips
    • 2 courgettes, cut into chunks
    • 1 clove garlic, peeled and crushed
    • 2 tbsp olive oil
    • ½ x 25g pack fresh basil, roughly torn


    1. Preheat the oven to 200°, gas mark 6. Using kitchen tweezers, remove any visible bones from the plaice. Roll up each piece of fish and secure with a cocktail stick, then place in a medium-sized shallow baking dish. Pour the pasta sauce around the fish and break the cheese roughly over the top.
    2. Mix the peppers, courgettes and garlic in a bowl with the oil and half the basil. Season, then tip onto a large baking tray.
    3. Place the vegetables and fish in the oven and cook for 20-25 minutes, or until the vegetables are tender and the fish is just cooked (it should be opaque and start to flake when tested with a fork). Remove the cocktail sticks. Serve on warmed plates, sprinkled with the remaining basil.

    Cook's tips

    Try other fillets of fish such as sea bass or lemon sole. Roll up in the same way as the plaice.
