    Easy Cauliflower Cheese

    • Total time: Ready in 15 minutes 15 minutes

    Serves: 2-3 as a main course, or 4 as a side dish

    Ingredients

    • 1 large cauliflower
    • Butter
    • 150g Waitrose West Country Farmhouse Mature Cheddar
    • 250ml tub Galbani Italian Mascarpone cheese
    • 2 tsp wholegrain mustard
    • Solo Sea Salt
    • Pepper

    Method

    1. Cut a large cauliflower into florets, then cook in boiling salted water for about 6 minutes until tender. Drain well and tip into a buttered shallow 1 litre ovenproof dish. Grate 150g Waitrose West Country Farmhouse Mature Cheddar.
    2. Mix a 250ml tub Galbani Italian Mascarpone cheese, 2 tsp wholegrain mustard, half the cheese and some Solo Sea Salt and pepper. Spread over the cauliflower, then sprinkle with the remaining cheese. Grill under a moderate heat until browned and bubbling.
