Easy Falafel

Falafels are great as quick, healthy snacks or a light meal. Serve with hummus dip or tzatziki dip, toasted pita bread and salad made from thinly sliced red or green cabbage, cucumbers, spring onions, cherry tomatoes and parlsey tossed with lemon juice and olive oil. You can add cubes of feta cheese in the salad too!

  • 2 cans of chick peas drained/rinsed
    1 can of green lentils drained/rinsed
    1 egg lightly beaten
    2-4 tablespoons finely chopped parsley or coriander
    salt & pepper to taste
    1 tablespoon lemon juice
    1 tsp cumin powder
    1/4 tsp chilli flakes if u want
    1 table spoon olive oil


  1. Process chick peas in food processor until it resembles coarse bread crumbs (or bulghur wheat). Add the lentils and whizz together. Add all the other ingredients and mix well. Form small balls with 1 tablespoon of mixture and place on an oiled tray. Bake at gas mark 5 for 12-15 minutes until golden brown and crunchy on the outside. It's ready to be served.
