    Exotic Fruit Cheesecake with Passion Fruit and Mango Coulis

    This is such a simple idea that you'll use it again and again. Pick up a ready-made vanilla cheesecake from the Patisserie Service Counter, and add fruit and sauce. It makes a stunning finale to any meal.

    Serves: 8 - 10

    Ingredients

    • 1 Waitrose DIY Cheesecake
    • 1 papaya
    • 1 kiwi fruit
    • 225g bottle Rowse Luxury Passion Fruit & Mango Coulis
    • 125g blueberries, rinsed

    Method

    1. Unwrap the cheesecake and place on a flat serving plate. Cut the papaya in half, scoop out the seeds, then peel off the skin using a sharp knife. Cut the flesh of each half into 8 slices. Peel and slice the kiwi fruit.
    2. Drizzle the surface of the cheesecake with a few tablespoons of the passion fruit and mango coulis. Arrange the prepared fruit on top. Serve each portion with some of the remaining coulis poured over.

    Variation

    The fresh fruit and coulis also make an excellent topping for plain sponge cakes, such as Waitrose Buttermilk Madeira Half Cake or Waitrose Mini Victoria Sponge Sandwiches. Serve with whipped cream sweetened with a little icing sugar to taste.
