Exotic Fruit Cheesecake with Passion Fruit and Mango Coulis (for 4-6)

This is such a simple idea that you'll use it again and again. Pick up a ready-made vanilla cheesecake from the Patisserie Service Counter, and add fruit and sauce. It makes a stunning finale to any meal.
Serves: 4 - 6
The fresh fruit and coulis also make an excellent topping for plain sponge cakes, such as Waitrose Buttermilk Madeira Half Cake or Waitrose Mini Victoria Sponge Sandwiches. Serve with whipped cream sweetened with a little icing sugar to taste.
