    Exotic Winter Fruits

    This simple fruit salad makes the most of lychees and other exotic fruits currently in season. As well as tasting good, it will boost your body with some of the extra vitamins and minerals that are essential during winter.

    Serves: 4


    • 1 lime
    • 50g Waitrose Golden Caster Sugar
    • 400g lychees, peeled and stoned
    • 150g physalis, papery skin removed and cut in half
    • 2 kiwi fruits, peeled and thickly sliced
    • 2 medium bananas


    1. Using a swivel-style vegetable peeler, pare 2 strips of lime zest, taking care not to remove any of the white pith. Squeeze the lime and reserve the juice. In a small pan, dissolve the sugar in 200ml cold water over a gentle heat, stirring occasionally. Add the 2 strips of lime zest, stir well and bring to a gentle boil. Allow to bubble for about 10 minutes or until thickened slightly to form a syrup. Cool.
    2. Place the prepared fruit in a bowl, slice and add the bananas. Pour the lime juice and syrup over the fruit and carefully turn them in the juices. Serve in glass bowls decorated with very finely grated lime zest.

    Cook's tips

    Try this recipe as a breakfast dish. Simply prepare the fruits without the lime syrup and serve with very low fat yogurt and a trickle of maple syrup or clear honey.
