    Falafel and Coucous with Minted Tomato Relish

    Falafel, which are lightly spiced Middle Eastern snacks made from chickpeas, can be turned into a meal by adding easy-cook couscous, a fresh tomato relish and a Greek-style salad. Look out for our vegetarian prepacked range in the deli chiller cabinets - perfect for picnics and barbecues. The range includes Mushroom and Herb Sausages, Celery, Stilton and Walnut Pâté, and Organic Falafel.

    • 200 g vine tomatoes, washed
    • 3 tbsp Waitrose Greek Extra Virgin Olive Oil
    • 2 tbsp chopped fresh mint
    • 0.50 tsp paprika
    • 0.50 tsp ground cumin
    • 200 g pack Waitrose Vegetarian Organic Falafel
    • 110 g pack Waitrose Couscous with Lemon and Garlic
    • salt and freshly ground black pepper


    1. Preheat the oven to 190ºC, gas mark 5. Chop the tomatoes into small pieces and place in a bowl with the oil, mint, paprika, cumin and seasoning. Mix lightly and set aside at room temperature.
    2. Arrange the falafel on a baking tray and bake for 10-12 minutes. Meanwhile, cook the couscous following the pack instructions. Fluff up with a fork and divide between warm plates. Top with the falafel and spoon the tomato relish on the side. Alternatively, serve the couscous, falafel and relish separately in bowls.
    3. Serve with lemon wedges and a Greek-style salad, made with crisp salad leaves, olives, red onion slices, tomatoes and cucumber.

    Cook's tips

    Couscous can be eaten warm or cold. If you would like to prepare it ahead of time, it can be reheated in the microwave on high for 2-3 minutes.
