Fattoush (Lebanese Salad with Toasted Bread)

This traditional Lebanese salad has it all. The herbs give it a wonderfully fresh fragrance, while the lemon juice delivers a zesty kick. The toasted bread adds a lovely crunch while also absorbing the lemony juices. Some Lebanese cooks also add a clove or two of crushed garlic to the dressing. Sumac, a traditional ingredient in fattoush, is a tangy, lemony spice made from dried berries. It's available from Middle Eastern grocers. Although it's worth tracking down, the salad is still delicious without it.
