    Fennel Tea

    • Preparation time: 5 minutes plus steeping
    • Total time: 10 minutes 10 minutes

    Serves: 6


    • Stalks and ferny fronds from 1 fennel bulb (about 50g)
    • 8 cardamom pods
    • 4 tsp fennel seeds


    1. Crush the cardamom pods lightly, then put them whole, with the fennel and fennel seeds in a large teapot (about 1.5 litre capacity). Fill with boiling water. Leave to steep for at least 5 minutes.
    2. Pour through a tea strainer and serve.
