    Fiery One-Pan Lamb

    • Cooking time: 10 minutes
    • Total time: 15 minutes 15 minutes

    Serves: 2

    Ingredients

    • 200g diced sweet potato
    • 1 tbsp waitrose garlic-infused olive oil
    • 1 tsp belazu rose harissa
    • 340g pack waitrose lamb diced leg
    • 150g shredded baby leaf or spring greens

    Method

    1. Place 200g Waitrose Frozen Diced Sweet Potato in a single layer on a plate. Cook in the microwave on high for 1-2 minutes. Place a non-stick frying pan over a high heat. Add 1 tbsp Waitrose Garlic-Infused Olive Oil and 1 tsp Belazu Rose Harissa. Cook for 30 seconds. Add a 340g pack Waitrose Lamb Diced Leg and cook for 2 minutes or until just brown. Add the sweet potato and cook for 3 minutes, stirring occasionally. Stir in 150g shredded baby leaf or spring greens with 3-4 tbsp cold water and toss everything together. Cook for 1 minute. Serve with couscous.
