    Fig and Almond Tarts

    • Preparation time: 20 minutes
    • Cooking time: 25 minutes
    • Total time: 45 minutes 45 minutes

    Serves: 6


    • 1 x 375g pack Saxby's Puff Pastry
    • Icing sugar, for dusting
    • 1 x 250g pack Waitrose White Marzipan
    • 12 fresh figs
    • 1tbsp Waitrose Clear Honey
    • The mango & passion fruit sauce:
    • Icing sugar
    • 1 large mango
    • 4 passion fruit


    1. Cut out 6 x 12.5cm pastry circles, rolling the pastry a little, if necessary. Place the pastry circles on a baking sheet.
    2. Lightly dust a work surface with icing sugar and roll out the marzipan thinly. Cut out 6 x 10cm circles and place one on each pastry circle.
    3. Slice the figs thinly across and arrange overlapping slices on the marzipan (2 figs to each tart). Bake in a preheated oven 200°C, gas mark 6 for 25 minutes until the pastry has risen and is golden. Warm the honey and brush over the figs.
    4. To make the sauce, peel the mango and cut the flesh away from the stone. Blend the flesh in a food processor until smooth. Cut the passion fruit in half and scoop the flesh and seeds into a sieve. Press the passion fruit through the sieve and add the purée to the mango. Add a little water, if necessary, and sweeten with a little icing sugar to taste. Serve with the tarts.
