    Flambèed Banana with Rum and Ice Cream

    Serves: 4

    Ingredients

    • 4 very ripe bananas
    • 60g unsalted butter
    • 50ml banana syrup (optional)
    • 1 teaspoon sugar to taste
    • ½ lemon
    • Pinch of ground cinnamon
    • 50ml strong rum
    • Vanilla ice cream or cream, to serve

    Method

    1. Peel and slice the bananas. Sauté in the butter for 3½ minutes. Add the remaining ingredients. Bring to the boil but be very careful not to overcook - about 3 minutes should be enough. Finally, pour over rum, set it alight, and serve.
    2. Alternately, slit the banana skin down one side. Place in a hot oven (200°C/gas mark 6) and bake for approx 13 minutes. Prepare the rum ingredients in the pan, and pour over the baked bananas before serving with ice cream or cream.
