    Flapjack Plum Pudding

    • Preparation time: 10 minutes
    • Cooking time: 35 minutes to 40 minutes
    • Total time: 50 minutes 50 minutes

    Serves: 4 - 6


    • 75g light muscovado sugar
    • 75g Waitrose Organic Jumbo Oats
    • 75g butter
    • 750g ripe English plums


    1. Halve and stone ripe English plums and spread over a buttered ovenproof dish. Melt butter and mix with Waitrose Organic Jumbo Oats and light muscovado sugar.
    2. Sprinkle over the plums and bake in a preheated oven, 180°C, gas mark 4, for 35-40 minutes, until the fruit is tender. Serve warm with custard or pouring cream.

    Cook's tips

    Store plums at room temperature and use within four days of purchase.

    Add a few plum stones when stewing the fruit for a subtle almond flavour.

    To halve plums, cut along the indentation in the flesh, twist the halves apart and remove stones with the tip of a knife.

    Plums are excellent eaten fresh, but cooking can intensify their flavour. Try them in pies, crumbles and tarts, stewed, baked or added to rich meat stews to give a little sweetness.
