Flatbread pizza with tomato and basil quark, prawns, chilli and rocket

3 flatbreads (such as Crosta & Mollica Piada Emiliana)
150g Arla Cherry Tomato & Basil Quark
170g pack Waitrose garlic and chilli king prawns
12 cherry tomatoes, halved
1 red chilli, finely sliced
150g grated mozzarella
3 handfuls of rocket
1. Preheat the oven to 220°C, gas mark 7. Put the flatbreads on 2-3 trays (you may need to cook them in batches), spread about 3 heaped tbsp quark on each and top each with 1 /3 of the prawns, cherry tomatoes, chilli and mozzarella. Bake in the oven for 10-15 minutes, until the prawns have turned pink and the mozzarella is golden. Top each pizza with a handful of rocket; serve straight away.
