    Fragrant Noodle Soup

    Serves: 2


    • A handful of bite-sized broccoli florets
    • 60g thawed garden peas
    • 75g rice noodles
    • 1-inch hunk of fresh ginger root
    • 1 tbsp pineapple juice
    • 2 tbsp tamari soy sauce
    • 675ml hot water
    • 3 green tea bags


    1. In a large saucepan, steep 3 green tea bags in 675ml hot water for about 5 minutes.
    2. Remove the tea bags and stir in 2 tbsp tamari soy sauce, 1 tbsp pineapple juice and a 1-inch hunk of fresh ginger root that has been peeled and cut into fine shards.
    3. Bring to the boil and add 75g rice noodles, 60g thawed garden peas and a handful of bite-sized broccoli florets. Cook until the noodles and the veg are tender but the broccoli still has a bite – about 5 minutes.
    4. Divide the soup into bowls to serve. If you like, you can also top each one with a handful of freshly chopped herbs such as mint, parsley and tarragon.
