    Fragrant salmon salad

    Marinate the salmon in an asian style dressing before steaming

    • Preparation time: 5 minutes plus 15 minutes marinating
    • Cooking time: 10 minutes

    Serves: 4


    • 1 pack Select Farm salmon fillets, about 550g
    • ½ cucumber
    • 2 carrots, coarsely grated
    • ½ iceberg lettuce, shredded
    • 10g coriander
    • 1 lime, in wedges
    • 1 Cooks’ Ingredients red chilli, deseeded and finely chopped
    • 1cm fresh root ginger, grated
    • 2 tbsp soy sauce
    • 1 tbsp groundnut or vegetable oil
    • 1 lime, juice
    • ½ tsp caster sugar


    1. Put the salmon, skin-side up, in a snugly fi tting dish. Mix the marinade ingredients, pour over, and leave for 15 minutes.
    2. In a steamer, bring some water to the boil. Lift the salmon out of the marinade and sit it, skin-side down, in the steamer. Cover and cook for 8 minutes. Boil the marinade for 1 minute and set aside.
    3. Meanwhile, cut the cucumber in half lengthways, deseed and slice thinly. Stir together with the carrot, lettuce and coriander. Skin and flake the fish. Fold everything together with the marinade. Squeeze the lime wedges over and serve.
