Fragrant Summer Peas

This healthy vegetarian meal dispels the fact that quick food cannot be healthy, niutritious or cheap .. Try it-I'm cetain you'll be delighted by it's subtly aromatic flavour

Why should your recipe win?
It takes an everyday freezer ingredient (petit pois) and turns it into either an interesting side, a light main or even an intriguingly healthy filler for pitta bread! This recipe is fragrant rather than spicy and quite more-ish.

  • Total time: 4 minutes prep + 6 minutes cooking

Serves: 4


  • 2 tablespoons oil (rice bran/sunflower)
    1 tsp cumin seeds
    400 g frozen petit pois
    3 green chillis deseeded
    pinch of turmeric powder
    1/4 tsp brown sugar
    3 cm piece of ginger finely chopped
    5 tbsps dessicated coconut (optional)
    Lime or lemon-1/4 juiced
    Sea salt to taste


  1. Heat the oil in a wok and when hot tip in the cumin seeds. Once they start sizzling add the coconut if using stir fry for a minute; add frozen peas and stir again. Add the green chillies, turmeric and stir fry for a minute ensuring the peas are coated with spices. Increase the heat and add sugar, and salt -stir to combine. The peas should be done in a couple of minutes, take the wok off the heat. Stir in the finely chopped ginger and the lime/lemon juice and serve. Serve with boiled rice
