    French Dressing

    Salad leaves are often served as a separate course in France. French dressing is incredibly simple to make and only has three basic ingredients: mustard, vinegar and oil, although other ingredients may be added, as here.

    Serves: 4


    • 2 tsp Dijon mustard
    • 1 tbsp white wine vinegar (or red wine vinegar)
    • 3 tbsp extra virgin olive oil
    • 1 finely chopped shallot
    • salad leaves


    1. For 4 people, place 2tsp Dijon mustard, 1tbsp white or red wine vinegar, and 3tbsp extra virgin olive oil in a large salad bowl. Add a finely chopped shallot if liked, and mix vigorously with a fork. Just before serving, add the salad leaves and toss well.
