    French-Style Peas

    Roughly snipped lettuce and just-crunchy salad onions turn this simple accompaniment into something special.

    • 450g peas
    • 1 soft round lettuce
    • 2 salad onions
    • 1 large knob of butter


    1. Cook 450g peas, fresh or frozen, in plenty of lightly salted, boiling water for 5 minutes or until tender, then drain. While the peas are cooking, roll up the large outside leaves from 1 soft round lettuce and snip into fine ribbons. Slice 2 salad onions.
    2. Return the peas to the pan with the lettuce ribbons, salad onions and a large knob of butter. Season and stir over a low heat until the butter has melted and the lettuce and salad onions have softened. Cover and keep warm until needed.
