    French Toast with Summer Berries


    • Selection of summer berries
    • Vanilla sugar to taste
    • Light red wine, such as Beaujolais
    • Slices of white bread
    • Eggs, beaten
    • Cream
    • Unsalted butter
    • Waitrose Cornish Dairy Ice Cream


    1. Gently cook a selection of summer berries in a small pan with some vanilla sugar to taste and a little light red wine, such as Beaujolais.
    2. Simmer until the berries are just soft, but holding their shape. Soak slices of white bread in beaten eggs whisked with a little cream, then fry in a small amount of unsalted butter until golden on both sides.
    3. Cut the toast in half and serve with the fruit compote and Waitrose Cornish Dairy Ice Cream.
