    Rack of Lamb with Spiced Berry Sauce

    • Preparation time: 5 minutes
    • Cooking time: 20 minutes to 30 minutes
    • Total time: 25 minutes to 35 minutes 35 minutes

    Serves: 4


    • Freshly ground black pepper
    • 2 Racks of  lamb, weighing approximately 300g each
    • Salt
    • The spiced berry sauce
    • 5tbsp Spiced Berry Cordial
    • 2tsp Waitrose Wholegrain Mustard
    • 5tbsp Waitrose Red Wine Vinegar
    • 3 shallots, peeled and finely chopped
    • 150g Waitrose Frozen Black Forest Fruits, thawed


    1. Place the lamb in a roasting dish, season with salt and pepper.
    2. Combine all the sauce ingredients and pour over the lamb.
    3. Place in a preheated oven 230ºC, gas mark 8 for 20-30 minutes or until thoroughly cooked.
    4. It may be necessary to cover the top lightly with foil for the last 5 minutes to stop the fruit from browning. Serve with boiled new potatoes and broccoli florets.
