    Fresh pomegranate, shallot and tarragon dressing

    Serves: 4 - 6 as a salad dressing

    Ingredients

    3 tbsp pomegranate seeds
    2 small shallots, finely chopped
    1 tbsp finely chopped tarragon
    ½ tsp dijon mustard
    2 tbsp pomegranate juice
    1 tbsp balsamic vinegar
    5 tbsp extra virgin olive oil

    Method

    1. Put the pomegranate seeds in a wide bowl and crush roughly with a fork. Add all the remaining ingredients and whisk together; season. This dressing is wonderful served over salads containing oily fish such as mackerel or rich meats such as lamb or duck.
