    Fresh Bronze Feathered Free Range Roast Turkey

    • 3.5kg fresh bronze feathered free range turkey, giblets removed
    • 1 lemon, quartered
    • 450g pack Waitrose Lemon, Parsley and Thyme Sausagemeat Stuffing
    • 50g butter, softened
    • Salt
    • Freshly ground black pepper


    1. Preheat the oven to 190°C, gas mark 5. Stuff the turkey according to the instructions below.
    2. Put the lemon quarters inside the body cavity. Weigh the turkey and allow 45 minutes cooking time per kg.
    3. Grease the base of a large roasting tin with a little of the butter. Place the turkey in the tin and spread the remaining butter over the turkey skin and season well. Cover loosely with foil and cook in the oven, basting with the juices every half an hour.
    4. Half an hour before the end of the cooking time, remove the turkey from the oven. Remove the foil and spoon off excess fat. Return the turkey to the oven.
    5. To test whether the turkey is cooked, insert a skewer or sharp pointed knife into the thickest part of the thigh. The juices should run clear. If they are pinkish, cook for a further 15 minutes and test again.
    6. Put the turkey on a warm serving dish and cover completely with foil to retain the heat. Leave to rest for about 30 minutes before carving.
