    Fresh Greenshell Mussels with Gratin Topping

    Serves: 4


    • Mussels
    • 4 slices Waitrose Parma Ham
    • 1 x 250g Akadia Feta Cubes in oil
    • Grated zest of 1 lemon
    • Freshly ground black pepper
    • ½ pack fresh coriander, finely chopped.
    • 2tbsp oil
    • Green salad
    • To serve
    • Lemon wedges


    1. Place the mussels in a large bowl and, under running cold water, scrape off any barnacles, seaweed and pull away the 'beards' with a sharp knife. Discard any mussels that are open and do not close when tapped with the back of a knife.
    2. Put the cleaned mussels into a saucepan and cover with water. Cover, bring to the boil and cook for 3-5 minutes until the mussels are open. Discard any that have not opened. Remove the mussels from their shells.
    3. Mix together 4 slices Waitrose Parma ham, very finely chopped, 1 x 250g Akadia Feta Cubes in oil, drained (reserving the oil) and very finely chopped; grated zest of 1 lemon; freshly ground black pepper; ½ pack fresh coriander, finely chopped.
    4. Place mussels in a single layer in a gratin dish and cover with the topping.
    5. Drizzle 2tbsp oil from the feta over the mussels.
    6. Place under a preheated medium grill for approximately 3 minutes to heat the mussels through and melt the feta.
    7. Serve with lemon wedges and a green salad.
