    Fresh Nectarines with Port and Vanilla

    Serves: 8

    Ingredients

    • 120g icing sugar
    • 400ml port
    • 2 tsp vanilla extract
    • 8 nectarines, halved and stoned

    Method

    1. Put the sugar, port and vanilla into a saucepan over a gentle heat and stir until the sugar has dissolved. Simmer for 1 minute.
    2. Put the nectarines into serving bowls and cover with the vanilla port. Serve warm or cold, with cream.
