    Fresh Orange and Olive Oil Salad

    Serves: 6


    • 6 medium-sized juice oranges
    • 1 teaspoon sugar or honey
    • 5 tablespoons Andalusian Extra-virgin olive oil
    • A few mint leaves to garnish


    1. Cut away all the skin and pith from the oranges and, using a serrated knife, cut the oranges into 5 or 6 thin slices. Arrange the fruit on a large plate, sprinkle over the sugar and spoon over the orange juice.
    2. Drizzle the oil over the orange slices, and scatter the small mint leaves to garnish. This should be served for breakfast or as a refreshing pudding.
