Fried Brussel Sprouts

I can't claim this as my own as I picked it up from somewhere in the past but can't actually remember where (maybe Delia Smith?) The love it or hate it sprout ( I hated sprouts before I tried this) is transformed when cooked this way though and avoids that over boiled thing as you can over cook this without too much damage to the finished article! TIP: if you make too much then add it to a bubble and squeak- works very well with fried or poached eggs

  • 750g Brussel Sprouts
    Large pinch of Fennel Seed
    Very large knob of butter (or butter substitute)


  1. Peel sprouts discarding all damaged leaves, then quarter each sprout. Rinse under cold water then dry.
  2. Melt the butter in a saucepan, add the fennel seed, give a quick stir then add the quartered sprouts and give a thorough stir. Leave for 5 minutes with an occasional stir to stop any burning or sticking.
  3. Once the spouts are softened then it's ready to serve. Goes well with most roast dinners including Christmas dinner.
