    Frozen Yogurt with Fresh Cherries

A refreshing, fruity dessert - simple to make and delicious served on its own or with a little peach Schnapps poured over the top just before serving. It is quick and easy to make with an ice cream maker but, if you don't have one, it only takes 4 hours in the freezer.

    • Preparation time: 10 minutes, plus chilling time 20 minutes in an ice cream maker, 4 hours in a freezer
    • Total time: 4 hours 40 minutes 60 minutes 60 minutes 60 minutes 60 minutes 40 minutes

    Serves: 6

    • 2 x 500g Waitrose Diet Bio Yogurt
    • 100ml Waitrose Skimmed Milk
    • 25g caster sugar
    • 2tsp vanilla essence
    • 200g fresh cherries, halved (stoned weight)

    1. Combine the yogurt, milk, sugar and vanilla essence in a bowl. Pour into an ice cream maker and follow the machine instructions, adding the cherries near the end of the process. Serve straight from machine.
    2. Alternatively, cover and place in the freezer, set to 'quick freeze', for about 2 hours.
    3. Remove the frozen yogurt from the freezer and stir vigorously to break up the ice particles. Add the cherries to the mixture. Return to the freezer until frozen.

    Cook's tips

To make the yogurt easier to serve, place in the refrigerator for about 10 minutes to soften before serving. This dessert will keep in the freezer for 2 weeks.

Replace 200g yogurt with 100g mascarpone cheese and stir in 8 Waitrose Mini Florentine Biscuits, crushed, with the cherries.
