    Fruit Medley Tarte Tatin

    Soft and succulent Waitrose Ready to Eat Dried Fruits make a stunning glossy topping in this rich fruit tart and, because it is cooked upside down, the pastry is beautifully crisp. Serve it warm with crème fraîche. It is also delicious made with a single fruit or a combination of two, such as prunes and apricots.

    Ingredients

    • 100g Waitrose Dried Prunes
    • 1 x 250g pack Waitrose Dried Fruit Medley
    • 1 x 375g pack Saxby's Dessert Shortcrust Pastry
    • Caster sugar

    Method

    1. Soften 100g Waitrose Dried Prunes by covering with boiling water for 1 hour, drain and dry. Arrange the prunes and 1 x 250g pack Waitrose Dried Fruit Medley in the base of a 23cm flan dish that has been buttered and sprinkled with caster sugar.
    2. Roll out 1 x 375g pack Saxby's Dessert Shortcrust Pastry, cut a circle slightly larger than the flan dish. Place on top of the fruit, pressing the edges down firmly. Prick once or twice. Place in a preheated oven 200°C, gas mark 6 for 25 minutes. Reduce the heat to 170°C, gas mark 3 for a further 30 minutes. Remove from the oven and leave to cool for a few minutes then turn the tart out onto a flat serving plate.
