    Fruit Salad with Hot Dressing

    You can use any fruit for this, but berries work particularly well and require minimal preparation. In the summer, try adding edible flower petals too. You can make the sauce in advance and leave it to stand with the vanilla pod in it, but make sure you reheat it before serving.

    • Total time: 15 minutes 15 minutes

    Serves: 6 - 8


    • 1 vanilla pod
    • 100ml fresh-squeezed lemon juice (2-3 lemons)
    • 70ml honey
    • 600-650g mixed fruit, such as Blueberries, raspberries, redcurrants and strawberries
    • 400ml crème fraîche


    1. Split the vanilla pod lengthways and put in a pan with the lemon juice and honey. Bring to the boil, reduce the heat and simmer for five minutes to let the flavour of the vanilla emerge. Taste the dressing and add more honey if you like.
    2. Divide the fruit between 6-8 bowls and put a dollop of crème fraîche on each. Remove the vanilla pod from the hot dressing and pour over the fruit and the crème fraîche so the crème begins to melt a little. Serve immediately.
