Fruity chicken couscous

300g Waitrose LOVE Life wholewheat couscous
400ml Cooks’ Ingredients chicken stock, hot
200g Waitrose British roast sundried tomato mini chicken fillets, diced
110g Waitrose pomegranate seeds
400g can essential Waitrose chickpeas, drained and rinsed
50g Waitrose LOVE Life ready to eat apricots, diced
2 carrots, coarsely grated
20g parsley, roughly chopped
4 tbsp Waitrose LOVE Life sweet chilli & mango dressing
1. Tip the wholewheat couscous into a heatproof bowl and pour over the hot chicken stock. Cover the bowl with cling fi lm and set aside for 5 minutes until the stock has been absorbed.
2. In a large bowl, mix together the chicken, pomegranate seeds, chickpeas, apricots and carrots.
3. Fluff up the couscous with a fork and stir into the bowl of chicken with the parsley and dressing. Serve warm or chilled.
