    Fusilli with Pesto, Rocket and Pine Nuts

    Serves: 4

    Ingredients

    • 400g fusilli pasta
    • 4 tbsp pesto
    • Roquette
    • Toasted pine nuts
    • Freshly grated parmesan
    • Thick, aged balsamic vinegar

    Method

    1. Cook 400g fusilli pasta as per pack instructions. When it is al dente, drain and stir through 4 tbsp pesto.
    2. Divide between 4 plates and top with roquette, toasted pine nuts and freshly grated Parmesan. Drizzle lightly with a thick, aged balsamic vinegar and serve immediately.
