Gammon with cider

A delicious and easy one pot dish with a gammon joint and root vegetables.

  • Total time: 1 hour 40 mins

Serves: 4

  • 1 joint of gammon (we use M&S unsmoked gammon joint)
Various root vegetables - leeks, carrots, parsnip, small onions or shallots (or red onions if preferred) - don't cut too small. 1in square or leave shallots whole.
Herbs to make a bouquet garni
    a tablespoon of plain flour
1/4 pint Vegetable stock (veg stock cube)
    1/4 can of dry cider

  1. Part cook gammon on hob for 40 mins with water. I also put a bit of cider in the water but this is optional. (When finished use the water to make the stock).
  2. Saute leeks, carrots, parsnips & onion with flour and a bit of the stock. Saute until slightly coloured and a bit softer.
  3. Place the gammon in a casserole dish (I use a Le Creuset 5.75 pint capacity). Add the sauted vegetables & bouquet garni. Pour the stock and cider on the top until the gammon is covered but not too much
  4. Put lid on casserole dish and cook on 160 degrees C for 1 hour.
