    Gardening club salad

    Serves: 2

    Ingredients

    • ¼ cucumber, diced
    • 100 g couscous
    • 1 tsp Marigold Swiss Vegetable Bouillon Powder
    • 8 cherry vine tomatoes, quartered
    • ¼ red onion, finely chopped
    • Juice and zest of 1 lemon
    • 2 tbs olive oil
    • ½ x 20g pack fresh mint leaves, finely chopped
    • 1 clove garlic, crushed
    • 3 sprigs fresh parsley, finely chopped

    Method

    1. Place the couscous and bouillon powder in a large mixing bowl. Ask an adult to pour over 150ml boiling water, then stir and cover with clingfilm. Stand for 5 minutes, then fluff the couscous with a fork.
    2. Add the tomatoes, cucumber and red onion. Pour in the lemon juice and olive oil, then stir everything together, along with the mint.
    3. Mix together the garlic, parsley and lemon zest and scatter over the top of the couscous salad to serve.
