    Garlic Chicken Parcels

    Low in fat.

    Ingredients

    • 4 boneless, skinless chicken breasts
    • 3 cloves of fresh green garlic
    • 1 sprig rosemary
    • Salt
    • Pepper
    • 2 tsp olive oil
    • The juice of 1/2 a lemon

    Method

    1. Place 4 boneless, skinless chicken breasts on 4 large squares of tin foil. Slice 3 cloves of fresh green garlic. Add to each chicken parcel with a sprig of rosemary and salt and pepper. Drizzle 2 tsp olive oil and the juice of half a lemon over each chicken breast, then seal the parcels with the join to one side.
    2. Bake in a preheated oven at 190°C, gas mark 5, for 30 minutes until thoroughly cooked and the juices run clear. Serve with warm crusty bread.
