    Gazpacho 3

    • Vegetarian

    Serves: 6 as a starter


    • 100g onion
    • 1 clove of garlic
    • Half a cucumber
    • 3 red peppers
    • 10 fresh, ripe plum tomatoes
    • 1 tsp white wine vinegar
    • Freshly ground black pepper
    • Fresh basil


    1. Roughly chop 100g onion, 1 clove of garlic, ½ cucumber, 3 red peppers, core and seeds removed, and 10 fresh, ripe plum tomatoes. Place in a liquidiser and blend until smooth.
    2. Add 1tsp white wine vinegar, then press through a sieve and add salt and freshly ground black pepper to taste. Serve chilled garnished with fresh basil.

    Cook's tips

    After sieving the gazpacho you can keep the pulp and use it as a fresh passata-style sauce.
