    Gerhards Cookies

    To make chocolate cookies, omit the vanilla and add 50g of cocoa powder with 325g of flour. For ginger cookies, finely chop a piece of preserved stem ginger and mix with 2 tablespoons of the syrup it comes in. Mix with 75g of caster sugar, 150g of diced, salted butter and 225g of plain flour

    Makes: 30 cookies


    • 125g icing sugar, sifted
    • ½ teaspoon vanilla essence
    • 1 medium egg yolk
    • 250g salted butter, diced
    • 375g plain flour, sifted


    1. Mix the icing sugar, vanilla essence, egg yolk and butter with a mixer or wooden spoon. Add the flour and mix to a firm dough, working as quickly as possible, especially in warm conditions.
    2. Shape the dough into a flat slab, wrap and chill for at least 1 hour (or up to 1 week). When you're ready to bake, preheat the oven to 200°C/gas mark 6. Roll out on a floured surface to a 4mm thickness.
    3. Cut out shapes as desired. Place well apart on lightly buttered baking sheets and cook for 12 - 14 minutes until golden. Remove from the oven and cool on a wire rack. Eat within a couple of days.
