    Giblet Stock

    No matter how unpromising the giblets look, they do make the ideal stock for the turkey gravy.


    • Turkey giblets, minus the liver
    • 1 small onion, halved
    • 1 carrot, sliced
    • 1-2tbsp parsley stalks
    • 1 celery stick, sliced
    • 1 bay leaf
    • A few black peppercorns


    1. Place all the ingredients into a saucepan with 1 litre cold water. Bring to the boil then simmer gently for about 2 hours or until reduced to about 850ml.
    2. Strain the stock, cool, then cover and store in the fridge.
