    Our festive gingerbread men recipe

    Children love to cut out and decorate these biscuits – not just with the currants, but all kinds of sprinkles, too.

    • Cooking time: 10 minutes to 12 minutes

    • 350 g plain flour
    • 1 tsp bicarbonate of soda
    • 2 tsp ground ginger
    • 100 g butter
    • 175 g light muscovado sugar
    • 4 tbsp golden syrup
    • 1 large egg, beaten
    • 25 g currants


    1. Preheat the oven to 190C/gas 5. Lightly grease 3 baking trays.
    2. Measure the flour, bicarbonate of soda and ginger into a bowl. Rub in the butter with your fingertips until the mixture resembles fine breadcrumbs, then stir in the sugar. Add the golden syrup and beaten egg and mix to form a smooth dough, kneading lightly with your hands towards the end.
    3. Roll out half the dough on a lightly floured surface to a thickness of about 5mm. Cut out gingerbread men using a gingerbread-man cutter, and place them on the prepared baking trays. Use the currants for eyes and buttons. Repeat with the remaining dough; roll out the scraps to make more.
    4. Bake in the preheated oven for about 10–12 minutes until they become a little darker. Cool slightly, then transfer to a wire rack and leave to cool completely.
