    Glazed Duck


    • A few salad onions, finely chopped
    • Basmati rice
    • 2 duck breasts
    • For the marinade:
    • A little lemon zest
    • A little orange zest
    • A pinch of chinese five spice powder
    • 2tbsp clear honey


    1. Score 2 duck breasts with a knife. Make a marinade with 2tbsp of clear honey, a pinch of Chinese five-spice powder and a little orange and lemon zest. Rub well into the duck breasts and allow to marinate for at least 1 hour.
    2. Pan-fry the duck breasts skin-side down, without oil for 5 minutes or until the skin turns brown and crisp. Place duck in a preheated oven 200°C, gas mark 6, for 10-15 minutes or until cooked to your taste. Remove from the oven and turn in the cooking juices to glaze. Allow to rest for 5 minutes, serve with cooked basmati rice and a few finely chopped salad onions.
