    Goats Cheese Crèpes

    Serves: 4


    • 100g Pant-Ysgawn
    • 2 medium eggs
    • 115g plain flour
    • 175ml milk
    • Salt and freshly ground pepper
    • Fresh chives


    1. Place ½x 100g pack of Pant-Ysgawn in a food processor with 2 medium eggs, 115g plain flour, 175ml milk, salt and freshly ground black pepper.
    2. Add a pack of fresh chives, chopped, reserving a few for garnish, and whizz together until smooth. Heat a little oil in a frying pan until really hot. Add 1-2 spoonfuls of the batter until the base is coated with a thin layer of the mixture. Place over a moderate heat and cook for 1-2 minutes on each side or until golden. Repeat, keeping the crêpes warm. This makes either 4 large or 8 small crêpes.
    3. To serve, dot the remaining cheese equally between the crêpes, roll up and serve garnished with the reserved chives.
