    Greek Country Salad 2

    Juicy Kalamata olives are perfect for adding to salads, serving with drinks or as part of a mezze supper.

    Serves: 4

    Ingredients

    • Waitrose Spanish Style Seeded Pan Gallego
    • Freshly ground black pepper
    • Salt
    • 3 tbsp chopped fresh flatleaf parsley
    • 1 finely chopped garlic clove
    • Juice of half a lemon
    • 3 tbsp extra virgin olive oil
    • 8-10 vine tomatoes
    • Half a cucumber
    • 1 red onion
    • 225g cubed feta cheese
    • 75g Waitrose Kalamata Olives

    Method

    1. In a large bowl, mix together 8-10 vine tomatoes; half a cucumber, sliced into wedges; 1 red onion, peeled and sliced into half rings; 225g cubed feta cheese, and 75g Waitrose Kalamata Olives.
    2. Pour the dressing over the salad and serve with Waitrose Spanish Style Seeded Pan Gallego. This recipe was first published on Waitrose.com in September 2000.
