    Greek Feta and Watermelon

    This brightly coloured salad is popular all over Greece. All it needs by way of accompaniment is a slice of crusty bread. Sunshine and a glass of wine are optional. Sliced radishes or pomegranate seeds may be added as well.

    Serves: 4 - 6


    • A wedge of watermelon, weighing about 900g
    • 200g Greek feta cheese
    • Freshly ground black pepper
    • 12 pitted black olives
    • 2tbsp fresh mint, roughly chopped
    • 3tbsp olive oil
    • 1tbsp lime juice


    1. Remove the rind from the watermelon and cut the flesh into cubes, picking out and discarding any seeds.
    2. Arrange the melon cubes on a serving plate. Roughly crumble the feta cheese over the melon and season with freshly ground black pepper. Arrange the olives on top. Sprinkle with the chopped mint.
    3. Mix together the olive oil and lime juice and drizzle it over the salad. Serve with crusty bread.
