    Greek Salad 1

    • Vegetarian

    Serves: Serves 4 as a main course


    • 125g olives
    • Feta cheese
    • 8 baby plum tomatoes
    • 1 small red onion
    • Half a cucumber
    • 2 tbsp oregano
    • 4 capers
    • 1 clove of garlic
    • 2 tbsp olive oil
    • 1 tbsp red wine vinegar
    • Salt
    • Freshly ground black pepper


    1. Combine 125g olives with feta cheese with 8 baby plum tomatoes, halved, 1 small red onion, halved and sliced, ½ cucumber, diced, and for a really substantial salad, 1 piece of feta in olive oil, cubed.
    2. For the dressing, place 2tbsp oregano in a screw-topped jar with 4 capers, finely chopped, 1 clove of garlic, crushed, 2tbsp olive oil and 1tbsp red wine vinegar. Add salt and freshly ground black pepper to taste. Shake well, pour over the salad and toss. Serve with warm crusty bread. Available from delicatessen counter.
