    Green Olive-Crusted Chicken

    • Total time: Ready in 30 minutes 30 minutes

    Serves: 4

    Ingredients

    • 4 skinless chicken breast fillets
    • 1 tbsp grated Parmigiano Reggiano
    • 1 unwaxed lemon, the finely grated zest
    • 50g Cooks’ Ingredients Breadcrumbs
    • ½ x 165g jar Waitrose Green Olive, Lemon & Coriander Tapenade

    Method

    1. Mix together ½ x 165g jar Waitrose Green Olive, Lemon & Coriander Tapenade, 50g Cooks’ Ingredients Breadcrumbs, the finely grated zest of 1 unwaxed lemon and 1 tbsp grated Parmigiano Reggiano. Press firmly on to 4 skinless chicken breast fillets to coat. Bake in a preheated oven at 180°C, gas mark 4 for 25-30 minutes or until cooked through, the juices run clear and there is no pink meat. Serve with a green leafy salad.
