    Green Onion Duck Egg Rolls

    Serves: 4


    • 2 teaspoons sesame oil
    • 4 tablespoons finely shredded fresh ginger
    • 6 spring onions, chopped
    • 6 duck eggs
    • 3 tablespoons hoi sin sauce
    • 2 tablespoons soy sauce
    • 2-3 tablespoons Chinese cooking wine or sherry


    1. Heat the sesame oil in a pan over a moderate heat. Add half of the ginger and the spring onions and cook until the ginger is soft (2-3 minutes). Transfer to a bowl to cool slightly. Add the duck eggs and whisk to combine.
    2. Pour 4-5 tablespoons of the mixture into a hot, greased frying pan over a moderate heat and swirl so that the mixture thinly coats the pan. Cook for 1-2 minutes, or until the mixture has set. Turn the egg onto a board and roll up immediately. Keep warm and repeat with the remaining mixture.
    3. To make the sauce, place the rest of the ginger, hoi sin, soy and wine in a small saucepan and simmer for 4 minutes. Pour into a small bowl.
    4. Halve the egg rolls and place on a serving plate.

    Garnish with crisp fried ginger slices, if you wish, and serve with the dipping sauce.
