    Green Tea and Mango Fool

    • Vegetarian

    Serves: 4


    • 2 large ripe mangoes
    • 45g icing sugar
    • 5 green tea bags
    • 284ml double cream


    1. In a saucepan, warm 284ml double cream with 5 green tea bags, until just below boiling point. Remove from the heat and allow the tea bags to infuse the cream for half an hour.
    2. Remove the tea bags and refrigerate the cream for at least half an hour. Once it’s cold, whip the cream with 75g icing sugar until it holds soft peaks.
    3. Chill the cream while you cut 2 ripe, large mangoes into thin slivers. Layer the cream and the mango in 4 dessert dishes. Serve cold with your favourite biscuit.
