    Green Tomato Chutney

    Another simple to make but extremely tasty classic chutney

    Serves: 6


    • Makes: About 3kg (6lb)

      1.8kg / 4lb Green Tomatoes
      675g / 1½lb Onions
      450g / 1lb Cooking Apples
      450g / 1lb Brown or Demarara Sugar
      600ml / 1 pint Malt Vinegar
      225g / 8oz Raisins and / or Sultanas
      ½ tsp Ground Ginger
      1 tsp Mixed Spices
      1 tsp Curry Powder (add more to taste)
      2 tsp Salt


    1. Wash and chop the tomatoes then peel and chop the onions.
    2. Put the tomatoes, onions, apple and half of the vinegar into a large saucepan (preferably heavy bottomed to avoid burning). Bring to the boil and cook for about 30 minutes or until tender.
    3. Add the raisins and / or sultanas then mix in the ground ginger. Continue to cook for 1 hour or until the mixture starts to thicken (stir occasionally).
    4. Add the sugar, salt and remaining vinegar. Continue simmering and stir occasionally.
    5. Ladle into sterilized jars. Leave for at least 4 weeks to allow the flavour to mature.
