    Greens with Leeks

    • Vegetarian

    Serves: 6 - 8


    • 6 leeks
    • 1 savoy cabbage
    • 50g butter
    • Salt
    • Freshly ground black pepper


    1. Wash, trim and finely slice the leeks. Wash, trim and shred the cabbage.
    2. Melt the butter in a large pan over a medium heat. Add the leeks and sweat gently without colouring, until tender - 15-20 minutes. Add the cabbage and 2 tbsp water and increase the heat so the water bubbles and steams the cabbage. By the time the water has evaporated (3-4 minutes), the cabbage should be just cooked. Season and serve.
